AVOCADO DIP

Dip! Dip! Dip!

I got this recipe from the Food Network Channel...AVOCADO PESTO!!

It is actually a Mexican food, but many chefs including myself (am not a chef!) have 're-engineered' the recipe to meet different taste-buds. To me, I adjusted according to what are available in my fridge....then you can feel how simple life is!

This pesto is normally used as a dip for the tortilla chips....you even can eat it with bread or any other chips. Or even eat it on its own because the taste is so appetizing...

Let us see the ingredients:

  • 2 fully ripen avocados (crushed)
  • 1 ripe tomato (crushed)
  • 1/2 green, red, and yellow capsicum @ bell pepper (diced)
  • 1/2 onion (diced)
  • juice from 1/2 of lemon (according to your taste)
  • pinch of salt and pepper

Method:

  • Just mix all together, lastly add the lemon juice and it is ready to go!
  • Best dipped with tortilla chips, or crackers of your choice. You can also enjoy it with the Arab bread @ kubuss

PANCAKE MY WAY...


This is my favorite pancake recipe. I have been using it since 2008!! I got it from one of the cooking websites. And countless time serving it to my family. The children love it so much...and the dad too!!

The easiest and least hassle in the kitchen. It can be prepared at any time...not only during breakfast...

Here are the ingredients as shown in the photo above:

2 eggs (lightly beaten)
300ml fresh milk
100gm butter (melted and cooled)
2 cups of flour
1 teaspoonful baking powder
pinch of salt
and of course a 'magic wand'...the whisker!

Method:
  1. Mix flour, salt and baking powder in a big bowl.
  2. Add in the egg and stir slowly.
  3. Quickly pour in milk...small amount at a time until finish.
  4. Mix and whisk really well...InsyaAllah the batter will never get lumpy if you use the right utensil...
  5. Lastly add in the cooled, melted butter and stir well.
  6. You may want to let the batter sit for at least 15 minutes but trust me, if you are in a hurry...just go ahead and cook it!
  7. You will need a good non-stick pan to cook the pancake...no oil or butter for cooking because you have added the melted butter altogether.
  8. Pour a ladle-full of the batter into the pan and wait until small bubbles appear...then flip it over for a few second and the pancake is done!
  9. Enjoy it with pancake syrup, honey, butter or fruit jam. My kids love the pancake syrup...

It has been a very long time since this blog being updated...it is not that I am no more doing the cooking...actually too much cooking till I got no time to put it up here....lame excuse...as usual.

This time I just wanted to share the foods that I cooked and still cooking for my beloved family. Not so much special but definitely foods that are prepared with lots of love...

on the right is Roasted Chicken...basically lemon juice, salt and pepper.

on the left is Green Chicken Curry...with lots of green chillies, galanger@lengkuas, onion, garlic and coconut milk.

The desserts are; bread pudding, juicy fruity salad and rainbow pudding....
